Cobb Salad

Serves two

Ingredients: (preferably organic)

  • 6 cups lettuce, chopped

  • 2 chicken breasts, pan fried & sliced

  • 2 handfuls cherry tomatoes, quartered

  • ½ avocado, diced

  • a few strips turkey bacon, cooked crispy & sliced small

  • 2 eggs, cooked waxy

  • shaved parmesan

Honey Mustard Dressing

  • 2 tbsp apple cider vinegar

  • 4 tbsp olive oil

  • 2 tsp mustard

  • 1 tsp honey

  • pink Himalayan salt, to taste

Directions:

01. Divide the lettuce between the two bowls and then top off with sliced chicken, cherry tomatoes, avocado, turkey bacon, two eggs and shaved parmesan.

02. Make the honey mustard dressing by mixing together apple cider vinegar, olive oil, mustard, honey and salt.

03. Dress the salad and enjoy!
