Coconut Rice Poke Bowl

Serves two.

Ingredients: (preferably organic)

  • 1 cup basmati rice
  • 1 can coconut milk
  • 1 cup edamame
  • 2 carrots, sliced into noodles
  • ½ cucumber, sliced into noodles
  • ½ mango, in cubes
  • 1 avocado, in cubes
  • pomegranate seeds, for garnish
  • spring onion, sliced, for garnish
  • black sesame seeds, for garnish
  • spicy sriracha mayo, for garnish
  • coconut aminos or tamari sauce, for seasoning

Directions:

01. Bring the rice and coconut milk to a boil in a pot, reduce heat and simmer until done.

02. Arrange your bowls: top rice with carrots, cucumber, edamame, avocado and mango and garnish with pomegranate, spring onion, spicy sriracha mayo and black sesame seeds. Enjoy!
