Green Thai Curry

Packed with veggies and full of flavor, this quick dish is all you need when you crave something comforting but healthy. So much better than takeout!

Ingredients: (preferably organic)

  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 shallot, finely diced
  • 1 spring onion, finely cut
  • 1 tsp ginger, grated
  • 1 tsp green curry paste
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup green beans, 
  • 1 cup champignon mushrooms, quartered
  • 2 cans coconut milk
  • a handful of kale
  • ½ lime, juiced
  • ½ tsp salt
  • black sesame seeds, for garnish
  • basil, for garnish
  • cilantro, for garnish
  • lime, for garnish


Directions:

01. In a large pan heat up the sesame oil, add garlic, shallot, spring onion, ginger and green curry paste. Sauté for a few minutes until fragrant.
02. Add all veggies except for the kale with a splash of water and simmer covered for ten minutes.
03. Pour in the coconut milk and let cook again for 8-10 minutes.
04. Add the kale, stir until wilted and season with salt, more curry paste and lime juice.
05. Garnish with sesame seeds, cilantro, basil and more lime. Serve with basmati rice.
