Pad Thai

So yum, fresh, comforting and most importantly, super quick and easy to make! This has been a weeknight staple for a few weeks in our family now and we all just can't get enough!

Ingredients: (preferably organic)

  • 1 head broccoli, in bite-sized florets
  • 2 large carrots, peeled & cut into bite-sized rounds
  • 2 handful shiitake, thinly sliced
  • 4 cups spinach
  • 1 tbsp coconut oil
  • one pack rice noodles
  • scallions, for garnish
  • cilantro, for garnish
  • lime wedges, for garnish


Peanut-Lime Dressing

  • 2 tbsp peanut butter
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 1/2 lime, juiced
  • water, to thin the sauce


01. In a large pan, add the coconut oil with the broccoli, carrot & shiitake. Steam covered with a splash of water for ten minutes.
02. Make the dressing: combine all the ingredients and mix well until creamy. Add water to achieve the desired consistency.
03. Cook the rice noodles for 8 minutes, drain and rinse with cold water to prevent sticking.
04. Add the spinach to the vegetables, cook until wilted and add half the dressing along with a splash of tamari.
05. Mix in the noodles and the rest of the dressing.
06. Arrange in bowls and top with scallion, cilantro and lime.
