Banana Bread 2.0
Ingredients: (preferably organic)
9 dates, pitted
1/2 cup almond milk
2 ripe bananas
2 eggs
⅔ cup greek yogurt
1 tsp cinnamon
1 tbsp olive oil
1 1/2 cup of gluten free oat flour
1 teaspoon baking powder
⅓ cup chocolate chips
Directions:
01. Pre-heat your oven to 180°C
02. Start by placing 9 pitted Medjool dates in a bowl and soak them in 1/2 cup hot almond milk. After 5 to 10 minutes, mash or blend them
03. In a separate bowl, mash the 2 bananas and add in the eggs, the yogurt, the cinnamon, olive oil and the dates mixture. Mix until combined.
04. Add the oat flour, the baking powder, crushed walnuts and crushed dark chocolate. Mix until smooth.
05. Pour the batter into a baking dish lined with parchment paper and bake at 180°C for 35-40 minutes until golden.
