Cilantro Lime Chicken with Cauliflower Rice

Serves 4

Ingredients: (preferably organic)

  • 4 chicken breasts

  • 1 bunch cilantro

  • 1 lime

  • ¼ cup olive oil

  • ¼ tsp salt

  • red pepper flakes, to taste

  • 1 head cauliflower

  • a splash of avocado oil

  • a squeeze of lemon

  • a dash of turmeric powder

  • pink Himalayan salt, to taste

  • a bunch of asparagus

Directions:

01. Prepare the marinade by placing the cilantro, lime juice, olive oil, salt and red pepper flakes in a food processor or blender and mix until smooth.

02. Place the chicken in a bowl and use half the cilantro lime sauce to marinate the chicken for at least 20 minutes.

03. In the meantime, make the cauliflower rice by placing the florets in a food processor and blending until you get a rice like consistency.

04. Heat up some avocado oil in a pan and place the cauliflower rice in it. Sauté for 8-10 minutes until tender and then add the turmeric, salt and lemon squeeze to taste. Set aside and keep warm.

05. Use the same pan to steam the asparagus - cut off ⅓ of the asparagus and place in the pan with a bit of water. Steam for 5-10 minutes until tender but still vibrant green, drizzle with a bit of olive oil and salt and set aside.

06. Place the chicken on a hot grill or a frying pan and cook for 8-10 minutes on each side until nicely charred and cooked through.

07. Assemble the plate - some cauliflower rice, chicken and asparagus and drizzle everything with cilantro lime sauce to taste. Enjoy this healthy and light dinner that will leave you feeling amazing!
