Fudgy Chocolate Cake

Ingredients: (preferably organic)

  • 1 bar (100g) dark chocolate

  • ½ cup butter, softened

  • ¾ cup light coconut sugar

  • 3 eggs

  • a pinch of salt

  • 1 ½ cups ground almonds

  • ¼ cup raw cacao powder

  • 1 tsp baking powder

Directions:

01. Pre-heat the oven to 180C. Line the bottom of a round cake pan with parchment paper and butter the sides.

02. Prepare a Bain Marie to melt the chocolate. While the chocolate is melting, mix together the butter and sugar until light and fluffy.

03. Separate the egg yolk from the whites and add the yolks and pinch of salt to the butter and sugar mix.

04. Add the melted chocolate, ground almonds, baking powder and cacao powder to the butter, sugar, egg mixture to combine.

05. Fluff the egg whites and carefully add it to the batter.

06. Pour the mixture into the cake pan and bake for about 30 minutes.

07. Let cool slightly and add a dark chocolate coating if desired.
