Burnt Basque Cheesecake
Ingredients: (preferably organic)
900g cream cheese, room temp
1½ cups sugar (I use light coconut sugar)
6 eggs
2 cups cream
½ tsp salt
1 tsp vanilla
⅓ cup GF flour
Directions:
01. Preheat oven to 200C and line a springform pan with parchment paper.
02. Whisk together the cream cheese and sugar until smooth, about 2 minutes.
03. Add eggs one at a time, beating after each addition.
04. Add cream, salt, and vanilla. Mix until combined.
05. Sift in flour and beat until smooth.
06. Pour into pan and bake 60–65 minutes until deeply golden and jiggly in the center.
07. Let cool (it will collapse – that’s normal!). Remove from pan, peel off parchment, and serve at room temperature.
