Ginger Miso Glazed Salmon with Mango Avocado Salsa

Serves 2

Ingredients: (preferably organic)

  • 2 salmon filets

  • a small piece of ginger, peeled & grated

  • 2 tbsp tamari

  • 1 tsp dijon mustard

  • 1 tsp maple syrup

  • 1 mango, peeled & cubed

  • 1 avocado, cubed

  • 1 spring onion, finely sliced

  • a handful of cilantro, finely chopped

  • ½ lime, juiced

  • a sprinkle of salt

Directions:

01. Pre-heat the oven to 200C. Prepare a baking sheet lined with parchment paper.

02. Prepare the marinade for the salmon: mix together tamari, ginger, dijon mustard and maple syrup. Brush the salmon with it and bake in the oven for 20 minutes until glazed and crispy on the edges.

03. Make the salsa: in a bowl, combine the mango, avocado, spring onion and cilantro. Drizzle with lime juice and season with salt. Mix carefully so all the pieces stay intact and it doesn’t mush.

04. Serve the salmon with the salsa and some rice and edamame on the side.
