Almond Milk
Makes about 4 servings
Ingredients: (preferably organic)
1 cup raw almonds, soaked in boiling water for 1 hour
2 dates, pitted
a dash of vanilla
3 ½ cups water
Directions:
01. Rinse the soaked almonds and add to a high speed blender along with the dates, vanilla and fresh water.
02. Blend until smooth, then prepare a bowl with a clean dish towel and squeeze the almond water mixture through to sift out the almond pulp.
03. Transfer the fresh almond milk to clean glass bottles or jars and use within 3-4 days.
