Hot Honey Beef Bowl
Serves two
Ingredients: (preferably organic)
1 sweet potato, peeled & cubed
1 pack ground beef
avocado oil, to taste
pink Himalayan salt, to taste
beef seasoning, to taste
1 tbsp tomato paste
2 cups kale, de-stemmed & bite sized
a drizzle of olive oil
a squeeze of lemon
1 cup cottage cheese
½ avocado, cubed
pickled onion, for garnish
a drizzle of honey, for garnish
chili flakes, for garnish
Directions:
01. Pre-heat the oven to 200C. Spread the sweet potato cubes on a parchment paper lined baking sheet, brush with avocado oil and season with salt, bake for 30 minutes until tender.
02. Prep the meat by adding some avocado oil to a frying pan, add ground beef, fry for a short time on high heat, then turn heat down to medium and add tomato paste and add beef seasoning and salt to taste.
03. Massage the kale with olive oil, some lemon and salt until tender.
04. Assemble the bowls with the kale, sweet potato, ground beef, cottage cheese and avocado, garnish with pickled onion and drizzle with hot sauce.
