Savory Egg Bites

Ingredients: (preferably organic)

  • 6 eggs

  • 1 cup cottage cheese

  • 1 tsp ghee or avocado oil

  • 4 slices turkey bacon, finely sliced

  • 5 champignon mushrooms, in small cubes

  • two handfuls kale, finely chopped

  • ⅓ of a feta cheese block, crumbled

  • a dash of black pepper

  • a dash of pink Himalayan salt

Directions:

01. Pre-heat the oven to 180C. Add the eggs and cottage cheese to a blender along with a few cracks of black pepper and a dash of salt, blend to combine.

02. Fry up the turkey bacon, then add the ghee along with the mushrooms and during the last two minutes the kale for a quick sauté.

03. Prepare a muffin tin with muffin liners (paper or silicone works both) and divide the turkey bacon, mushroom and kale mix evenly. Top with feta crumbles and fill up with egg cottage cheese mix.

04. Bake the egg bites for 12-15 minutes until set and golden. Let them cool before storing in a glass container up to 3-4 days or freeze them to have on hand on busy mornings.
